Weight first

A teaspoon is a volume. A gram is a decision.

Volume changes with the shape and packing of an ingredient. Weight gives buying agents and cooks one stable quantity to carry from a recipe into a catalog request.

The headline example

Same teaspoon, different salt
Diamond Crystal kosher salt is about 2.8 g per teaspoon; Morton kosher salt is about 4.8 g. The same 1 tsp measure therefore carries 2.0 g more Morton salt—volume alone cannot tell the buying or recipe story.
